Linzer Cookie Recipe

Share these sweet heart-shaped linzer cookies with your family and friends for Valentine's Day! This recipe is simple, but the results are beautiful, and if you're looking to impress, this is the way to do it.

*Note: Contains nuts (almonds) and fruit jam. Be cautious of food allergies, and you can always substitute different jam fillings.*


Ingredients:

½ cup butter (113 grams)

½ cup powdered sugar (60 grams)

1 egg yolk

¼ tsp salt

¼ tsp cinnamon

½ tsp vanilla extract

1 tbsp lemon juice (15 mL)

1 ¼ cups all purpose flour (150 grams)

½ cup almond flour (50 grams)

Fruit jam of choice


Step 1: Making the cookie dough

  1. Beat butter and sugar with an electric hand mixer until light and fluffy.

  2. Add the egg yolk and mix it into the butter mixture.

  3. Add salt, cinnamon, vanilla, and lemon juice and beat to combine.

  4. Stir in flour and almond flour and mix on a low speed until just incorporated but with no dry flour.

  5. Wrap the dough in plastic and refrigerate or freeze for at least one hour or up to two days (or longer).

Step 2: Rolling out the cookies

  1. Preheat oven to 350℉ (175℃)

  2. On a lightly floured surface, roll out the dough until a ¼ inch thickness.

  3. Cut out the dough with a circular cookie cutter.

  4. With half of the dough rounds, use a heart cutter (or other cookie cutter of your choice) to punch out the centers.

  5. Reroll the scraps to make more cookies. This recipe should give you 32 cookie halves.

  6. Place on a parchment-lined baking sheet 2 inches apart.

  7. Bake for 9-10 minutes or until lightly golden but still pale. Make sure they don't burn.

Step 3: Assembly

  1. Dust powdered sugar over the cutout cookies using a sieve.

  2. Spread a layer of jam on the other half of the cookies.

  3. Sandwich the two on top of each other, and then you are ready to enjoy!


*If you don't have a heart-shaped cookie cutter, you can always make one yourself with a soda can (like I did)! Or just use another cookie cutter of your choice.
